Janet's Easy Peasy Tuna Salad

“I'm sure most of you out there have your own recipe for this, but if you don't, or you are looking for another one to try, this makes a great lunch, especially if you pack yours. With only 5 ingredients, this salad takes only minutes to make. And the measurements here are very general, so feel free to add more of what you like or have on hand, or to jazz it up with other herbs and seasonings.”

  • 2 (12 oz.) cans white tuna in water, drained well

  • A hadnful of Boomgrow leafy goodness

  • 2 teaspoon of steamed chick peas

  • 2 small grilled beetroot

  • 1tsp tossed sunflower seeds scattered over, or use your favourite nuts! I do love nuts!

  • 2 boiled eggs

Dressing

  • 1tablespoon olive oil

  • 1tsp lemon juice

  • 1tsp balsamic vinegar

  • Dash of mustard

  • Mix well.

  1. Drain leafy goodness in a strainer or colander. Place in a medium sized bowl.

  2. Toss all the ingredients together. Pour mixed dressing.

  3. Enjoy !
